I’m Jammin!

It's officially the last day of summer so I'm making some Blackcurrant & Gooseberry Jam with the berries we grew in our garden. It made a grand total of 3 small jars! The taste of the blackcurrants is so deliciously intense because they are organic, just left to grow, naturally.

Here's what you need:

  • 1lb of fresh berries (blackcurrant and gooseberries)
  • 2 tbsp chia seeds
  • 2 tbsp water
  • 200mls honey

Method:

Bring the berries and water to a slow boil and continue to boil for 4-5 minutes to soften and bring out the flavour. Slowly cool and add chia seeds and honey. Stir thoroughly and transfer to clear sterilised jars (I steam mine for 10 minutes in my veg steamer). Put a small circle of parchment paper on top of your jam to help prevent your jam from spoiling. Seal your jars, refrigerate and Enjoy.. P.s. we love a teaspoon of this jam on our oats in the morning!
